Vidalia onion relish

Ingredients

2poundsSweet onions (Vidalias), chopped
2eachesStalks celery, sliced
1eachSweet red pepper, chopped
1tablespoonButter or margarine, melted
¾cupCider vinegar
¼cupWater
2tablespoonsBrown sugar
1teaspoonCelery seeds
¼teaspoonSalt

Directions

Saute onions, celery, and red pepper in butter in a small Dutch oven 15 minutes or until tender. Add vinegar and the remaining ingredients to the mixture. Bring to a boil; reduce heat and simmer uncovered 20 minutes. Store in refrigerator.

Serve chilled or at room temperature.
