Vegetable omelette

Measure Ingredient
2 Beaten eggs
½ small Chopped onion
10 grams Butter
10 millilitres Oil
100 grams Frozen vegetable mix; cooked to microwave
; instructions
Salt and pepper to taste

TO MAKE 1 OMELETTE

Fry the onion in oil and butter without colour. Add the cooked vegetables, top up with the eggs, season and let set in the pan.

When fully cooked, fold in half and serve with mashed potatoes and garden peas.
