Yield: 1 servings
|½ small||Chopped onion|
|100 grams||Frozen vegetable mix; cooked to microwave|
|Salt and pepper to taste|
TO MAKE 1 OMELETTE
Fry the onion in oil and butter without colour. Add the cooked vegetables, top up with the eggs, season and let set in the pan.
When fully cooked, fold in half and serve with mashed potatoes and garden peas.
