Vanilla granola

Ingredients

2cupsOld-fashioned oats
cupApple juice concentrate thawed
2tablespoonsLight brown sugar
1tablespoonGround cinnamon
1cupUnsweetened flaked coconut
1eachVanilla bean split & seeds removed
1cupDried sour cherries
1cupGolden raisins

Directions

Preheat the oven to 300F. In a large bowl, place the first four ingredients, and toss well. Spread the granola onto a large cookie sheet and bake for 25 minutes, stirring occasionally. Stir in the coconut and vanilla seeds, and bake for another 20 to 25 minutes, until lightly browned. Stir in the cherries and raisins. Cool and store in an airtight container for up to 1 month.
