Turkey skillet ratatouille

Ingredients

| 1 | Onion; halved/thinly sliced | |
| 1 | Garlic clove; minced | |
| 2 | cups | Tomatoes; broken/w juice |
| Salt & pepper to taste | ||
| 1½ | teaspoon | Oregano |
| 3 | cups | Turkey; roasted/cubed |
Directions
Spray skillet with cooking spray. Combine all ingredients except turkey. Cover and simmer 10 minutes, stirring frequently, until vegetables are tender-crisp. Stir in cubed turkey, Cook and stir uncovered until nearly all the liquid is evaporated and the turkey cubes are white (about 3 to 4 minutes).
