Potato ratatouille

Yield: 4 servings

Measure Ingredient
2 larges Yellow onions, chopped
2 cloves Garlic, minced
1⅜ cup Water
3 \N Green peppers, chopped
4 \N Zucchini, sliced
2 larges Potatoes, peeled & chopped
4 cups Peeled and chopped tomatoes
\N \N (or 1 32 oz. can)
1 teaspoon Fresh basil, chopped
\N \N (or 1/2 ts. dried)
1 teaspoon Fresh oregano, chopped
\N \N (or 1.2 ts. dried)
2 tablespoons Fresh parsley, chopped
\N \N (or 1 tb. dried)
\N \N Fresh ground pepper to taste

Place onions and garlic in a large pot with water.

Cook and stir for about 3 minutes. Add remaining ingredients, except pepper. Cover and cook over medium heat for 30 minutes, stirring occasionally. Season with pepper before serving.
