Turkey salad with yogurt ^

Ingredients

1teaspoonSalt
poundsTurkey drumstick
2Bananas, peeled and sliced
2Red apples, peeled, cored and diced
½Lemon, juice of
1smallPineapple, in small cubes
cupSeedless red grapes, halved
cupHeavy whipping cream
cupPlain full cream yogurt
teaspoonSalt
teaspoonPepper
1tablespoonBrandy
6Sprigs fresh mint for garnish

Directions

Cover drumstick with water, bring to a boil. Cover and simmer 1 hour.

Combine banana slices and apples; sprinkle with lemon juice. Add pineapple and grapes. Remove drumstick from broth and let cool.

Remove meat and cut into small cubes. Add to fruit. Whip cream until stiff. Mix with yogurt, saot, pepper and brandy. Pour over fruit and turkey; mix well. Garnish with mint and serve.
