Tuna patties

Ingredients

2cansTuna; drained, finely flaked
1cupSoft bread crumbs; about 3 slices
½cupChopped celery
½cupSour cream
Juice of 1/2 lemon
1Clove garlic; fine minced
2tablespoonsChopped green onion
1tablespoonButter
½cupSour cream
¼cupChopped green onion
3Egg; well beaten
4tablespoonsShortening
1smallCucumber; peeled and finely chopped
1tablespoonLemon juice
Salt and pepper to taste

Directions

CUCUMBER SAUCE

SOUR CREAM SAUCE

Mix ingredients, except shortening, together and form into patties.

Melt shortening in heavy skillet and saute the patties until golden brown. Drain on absorbent paper. Serve hot with sauce or chill for several hours or overnight and serve cold with Cucumber sauce.

Cucumber sauce: Mix all ingredients well and chill.

Sour Cream Sauce: In small saucepan saute onion in butter. Lower heat and stir in sour cream and lemon juice. Salt and pepper to taste. Serve over hot patties. From: The Tuna Cookbook
