Tropical kumquat cake

Yield: 1 Servings

Measure Ingredient
3 Eggs
2 cups Sugar
1 cup Oil
1 teaspoon Cinnamon
1½ cup Chopped kumquats
1 cup Chopped nuts
20 ounces Canned crushed pineapple; (well drained)
3 cups Flour
2 teaspoons Baking soda
1 teaspoon Salt

In a bowl, beat eggs, sugar, and oil. Fold in dry ingredients and mix well.

Add kumquats, nuts, and pineapple. Pour into greased and floured 10" tube pan. Bake 1 hour and 15 minutes in a 350 degree oven. Cool, remove from pan.
