Tarragon roast chicken

Yield: 4 Servings

Measure Ingredient
2½ \N -3 pound chicken
1 \N Clove garlic, cut in half
\N \N Kitchen Bouquet
\N \N Salt and pepper, to taste
\N \N Tarragon, to taste
\N \N Tarragon Sauce, (see sauces)
\N \N Hot rice for 4

Rub cut garlic clove on all sides of chicken. Rub lightly with Kitchen Bouquet. Sprinkle with salt, pepper and tarragon to taste. Place in open Microwave dish, breast-side down. Microwave on High for 7 minutes. Turn dish ½ turn. Microwave on High for 7 minutes longer. Let stand for 10 minutes while making Tarragon Sauce. Serve sauce over meat with rice.
