| ¼ | teaspoon | Ground Cumin |
| ¼ | teaspoon | Ground Ginger |
| ⅛ | teaspoon | Thread Saffron -- crushed |
| 1 | tablespoon | Cooking Oil |
| 3 | pounds | Broiler Chicken -- cut up |
| 16 | ounces | Canned Tomatoes -- cut up |
| 1 | each | Lemon |
| ½ | cup | Parsley -- snipped |
| ½ | cup | Olive With Pimento |
| 1 | teaspoon | Salt |
Directions
in a large skillet cook onions , garlic , coriander , paprica ,cumin , ginger , safron , and salt in hot cooking oil until onion is tender but not brown. stir in chicken and undrained tomatoes. transfer mixture to a 3 quart casserole. cover; bake in a 375° oven 1¼ to hours or till chicken is tender. skim off fat quarter lemon length wise and seed. stir lemon parsly and olives into cassarole: heat through.
