Sweet habanero smoked pork loin stack

8 | slices | Red onion |
½ | Head Green or savory cabbage; shredded | |
12 | Sweet habanero peppers; julienned | |
½ | cup | Country style Dijon mustard |
¼ | cup | Oil and vinegar salad dressing |
1 | teaspoon | Salt |
1 | teaspoon | Blackpepper |
½ | cup | Sorghum Molasses |
½ | cup | Balsamic vinegar |
1 | tablespoon | Chili powder |
Directions
SLAW
SAUCE
Cut thick (½") slices of tomato and red onion and grill, basting them with oil and vinegar as needed, grill only until slightly charred and barely tender.
Combine slaw ingredients and chill. (save habanero trimmings and seeds for sauce)
Combine sauce ingredients and cook to reduce to ½ cup total sauce To assemble: Place an individual portion of slaw in middle of each pile.
Place, in alternating layers, pork, tomato, pork, onion, pork. Drizzle sweet habanero sauce reduction over stack. Garnish top of stack with thinly julienned sweet habanero.
