Sweet grilled salmon

Yield: 4 servings

Measure Ingredient
4 \N Salmon fillets, 4-6 oz. each
2 tablespoons Honey
½ teaspoon Dry mustard
2 tablespoons Water; warm
2 teaspoons Soy Sauce, low sodium
\N \N Lemon slices for garnish

Prepare the marinade by combining honey, mustard, water and soy sauce in a bowl. Set aside. Carefully skin the salmon fillets using a very sharp knife, place in a non-reactive dish and drizzle the marinade over the salmon. Cover and refrigerate for 30 minutes. When grill is ready brush brush olive oil lightly on fish basket and place fillets in basket. If you don't have a fish grill basket place oiled aluminum foil with a few slits punched on your grill and place the fish on that.

Grill each side for 2-3 minutes. Turn the fish over carefully only once.

Cook to desired texture. Brush fish with any leftover marinade just before removing from grill. Serve at once with Spicey Black Beans (recipe follows) and your favorite rice. This dish can also be cooked in the broiler of your oven.

Spicey Black Beans - for a quick and easy side dish that is especially good with grilled fish, combine a can of black beans and two heaping tablespoons of your favorite salsa in a saucepan. Heat through and serve.
