Sweet & sour pork philippine island

Ingredients

8ouncesLean boneless pork loin
½cupChicken bouillon
¼mediumGreen pepper, diced
dashGarlic powder
½cupCanned crushed pineapple,
No sugar added
Artificial sweetener to
Equal 1/2 ts sugar
1tablespoonVinegar
½cupCooked enriched rice
1mediumTomato, cut into 6 wedges
Salt to taste
½teaspoonChopped fresh parsley

Directions

Broil pork 4 inches from source of heat 5 minutes on each side.

Remove; cool; cut into 1-inch cubes. Place in a nonstick skillet with bouillon, pepper and garlic. Simmer, stirring, until liquid has reduced to half its volume. Add pineapple, sweetener and vinegar.
