Suess-sauer rotkohl (sweet-sour red cabbage)

Ingredients

| 5 | cups | Shredded red cabbage | 
| 2 | cups | Salted water | 
| 4 | Slices diced bacon | |
| 2 | tablespoons | Brown sugar | 
| 2 | tablespoons | Flour | 
| ½ | cup | Water | 
| ⅓ | cup | Vinegar | 
| 1 | teaspoon | Salt | 
| ⅛ | teaspoon | Pepper | 
| 1 | small | Onion | 
Directions
Cook cabbage in 2 cups salted water, in covered pan 5 to 8 minutes, until crisp-tender.  Drainandreservewater.  Fry bacon, remove bacon and half of bacon fat.  Reserve.  Add sugar and flour to remaining fat, blend.
Add reserved water, vinegar, seasoning and onions.  Cook until thick, about 5 minutes.  Add bacon and cabbage, heat thoroughly.  Garnish with diced bacon.
