Stir-fried chicken and mushrooms

4Cloves Garlic; minced
1tablespoonFresh Ginger; minced
1Whole Chicken Breast; skinned, boned and cut into strips
8ouncesMushrooms; sliced
1Jalapeno Chile; minced
4Green Onions; sliced
2tablespoonsSoy Sauce
Steamed Rice

Directions

Heat oil in wok or heavy large skillet over medium-high heat. Add garlic and ginger and cook until golden, stirring constantly, about 30 seconds. Add chicken, mushrooms and jalapeno and cook until chicken is cooked through, stirring constantly, about 5 minutes.

Remove from heat. Mix in onions and soy sauce. Serve with rice.
