St. james winery gourmet potato salad

12smalls(To 14) New Potatoes, About 1 1/2 Lbs) -- unpeeled
3tablespoonsSt. James Country White Wine
¼cupOlive Oil
2tablespoonsWine Vinegar
¼teaspoonDried Whole Tarragon
¼teaspoonSalt
¼teaspoonWhite Pepper
1tablespoon(To 2) Dijon Mustard
¼cupGreen Onions -- thinly sliced
¼cupFresh Parsley -- minced

Directions

Wash potatoes and cook in boiling water until tender. Cut into ¼-inch slices, add wine and let stand for 10 mins. Combine olive oil and next five ingredients and stir well. Pour over potato mixture. Add green onions and parsley and stir gently. Makes 8 servings.
