Squirrel sausage

2 | Feet small sheep casings | |
2 | pounds | Squirrel meat |
1 | teaspoon | Salt |
½ | teaspoon | White pepper |
2 | tablespoons | Toasted pine nuts |
⅛ | teaspoon | Mace |
⅛ | teaspoon | Cardamom |
⅛ | teaspoon | Allspice |
Prepare casings. Grind meat through the fine disk. Mix with remaining ingredients. Grind again and stuff into casings. Twist off into 2" links resembling cocktail franks. cook by steaming or simmering for about 30 minutes. Serve warm or cold.
