Spicy spud chicken

⅓ | cup | Butter; melted |
⅔ | cup | Instant mashed potato flakes |
3 | tablespoons | Dry taco seasoning mix |
⅛ | teaspoon | Ground red pepper |
⅓ | cup | Grated Parmesan cheese |
3 | pounds | Chicken; cut into eight pieces |
Directions
Preheat the oven to 375F. Coat a 9" x 13" baking dish with nonstick cooking spray. Place the melted butter in a shallow dish. In a large bowl, combine the remaining ingredients except the chicken. Dip the chicken pieces into the melted butter, then the potato mixture, coating well. Place the chicken in the baking dish and bake for 45 to 60 minutes, or until golden and no pinks remains in the chicken.
