Spicy chicken sate with peanut sauce

| 1 | pounds | Chicken breast; skinless, boneless | 
| 2 | tablespoons | Canola oil | 
| 3 | Cloves garlic; minced | |
| 1 | teaspoon | Lime peel; finely shredded | 
| 2 | tablespoons | Lime juice | 
| 1 | tablespoon | Curry powder | 
| 1 | teaspoon | Sugar | 
| 1 | teaspoon | Soy sauce | 
| ¾ | teaspoon | Ground red pepper | 
| Peanut sauce | ||
Directions
Soak 8 bamboo skewers in hot water 1-3 hours. Rinse chicken and pat dry. 
Cut lengthwise in strips. For marinade combine remaining ingredients, except peanut sauce, in a plastic bag. Add chicken. Seal bag and marinate in refrigerator 2 hours. Drain chicken, discarding marinade. Loosely thread chicken strips accordion-style onto skewers. Grill directly over medium hot coals 5-7 minutes or till chicken is tender and no longer pink. Serve with peanut sauce. Serves 4.
