Spiced vinegar

Measure Ingredient
20 eaches Servings
1 each Pt Red wine vinegar
1 each Bay leaf
1 teaspoon Allspice
1 teaspoon Coriander seeds
1 teaspoon Shelled cardamon seeds
1 each Stick of cinnamon
6 eaches Whole cloves
2 eaches Tb Sugar

YIELD

Combine all ingredients in the top of a double boiler. Over boiling heat, heat mixture until simmering. Turn off heat, cover and simmer 2 hours. Leave the spices in the vinegar and pour into clean glass bottles with stoppers. Store in a cool place until ready to use.
