Spanish casserole

Measure Ingredient
3 \N Zucchini; sliced
3 smalls Onions; sliced
1 \N Clove garlic; crushed
3 \N Large tomatoes, peeled
\N \N _ and sliced
\N \N Salt and pepper
\N \N Parsley; chopped
\N \N Lemon rind; grated

Cook zucchini, onions and garlic in a small amount of water for 5 minutes. Add tomato and cook for 3 minutes longer. Season to taste.
