Spam eskabechi

Measure Ingredient
1 can Spam
1 Garlic clove, minced
1 large Onion, sliced lengthwise
¼ cup Fresh ginger, chopped
2 cups Green Papaya, chopped
1 each Bell pepper
⅓ cup Vinegar
1 cup Water
2 tablespoons Soy Sauce
2 eaches Tomatoes, sliced
3 eaches Green Onions, chopped
1 tablespoon Cornstarch

Fry garlic and onions in a small amount of oil. Add papaya and peppers and cook another 10 minutes on medium heat. Add vinegar, water and soy sauce. Bring to boil. Add corn startch that has been added to cold water. Stir in and allow sauce to thicken. Spoon over warmed spam. Remove to platter and place in warm oven for about 5 minutes to allow flavers to combine. Serve over steamed rice.
