|1 pack||Stuffing mix (7 oz.) or|
|1½ cup||Dried breadcrumbs*|
|1||Box frozen peas; thawed* (7 oz.)|
|1 can||Spam (12 oz.)**|
|1 can||Cream mushroom soup (10 1/2 oz.)|
|1 medium||Onion, chopped|
|1 cup||Mushroom, sliced|
|1 cup||Celery, sliced|
* Or stuffing of your choice...cornbread, whole bread, whatever. I am sure The King of Spam, Jim Bodle wouldn't care. To quick thaw peas run under hot water a few minutes.
** Could use any leftover meat like chicken, turkey, beef, pork, tuna, hot dogs and sausage. Make stuffing following directions on package. Saute vegetables until softened. Mix the stuffing and the sauteed vegetables together and mix well. Place in grease casserole.
In a bowl, combine spam and mushroom soup and mix well. Spread the spam-soup mixture on top of stuffing mixture. Bake in at 350 degrees oven which has been preheated for 30 minutes. Serves 6.
