Spam and black beans with rice

Ingredients

1cupLong-grain rice; cooked
1canSpam luncheon meat - (12 oz); cubed
½cupChopped onion
½cupChopped green bell peppers
1tablespoonButter or margarine
1canBlack beans - (15 oz); drained
1canCajun-style stewed tomatoes
½teaspoonCumin
teaspoonCayenne pepper

Directions

Cook rice according to package directions.

In large skillet, saute Spam, onion and bell pepper in butter until onion is softened and Spam is lightly browned. Stir in beans, tomatoes, cumin, and cayenne pepper. Cook, stirring occasionally, until beans are thoroughly heated. Serve over the hot cooked rice.
