Smoked chicken and apricot salad

| 2 | tablespoons | Finely chopped chives | 
| ¼ | cup | Vinaigrette dressing | 
| 300 | grams | Fresh apricots; halved and deseeded | 
| 2 | tablespoons | Slivered almonds; toasted | 
Directions
1. Arrange lettuce leaves on serving platter. 
2. Combine green onions, bean sprouts, celery, parsley and chives in a bowl. Pour over the dressing and toss to coat. 
3. Place salad in a pile into the centre of the platter. Arrange apricots and chicken on the outside. Sprinkle over the almonds.
