Smoked chicken and apricot salad

2Stalks celery; sliced diagonally
2tablespoonsFinely chopped parsley

¼cupVinaigrette dressing
300gramsFresh apricots; halved and deseeded
2tablespoonsSlivered almonds; toasted

Directions

1. Arrange lettuce leaves on serving platter.

2. Combine green onions, bean sprouts, celery, parsley and chives in a bowl. Pour over the dressing and toss to coat.

3. Place salad in a pile into the centre of the platter. Arrange apricots and chicken on the outside. Sprinkle over the almonds.
