Smoked chicken breast

Yield: 4 -6 as hors

Measure Ingredient
1 tablespoon Brown sugar
1 teaspoon Salt
2 \N 10-oz boneless chicken breasts
\N \N Strong Tea Smoking Mixture (see recipe)

Here is a technique described in the latest 'Food & Wine". (3/97) Combine salt and sugar in a bowl. Rub into the chicken. Cover a refrigerate overnight. Smoke for 30 minutes. Let rest 5 minutes before slicing. Serve warm or cold.
