Smoked chicken sandwiches

Measure Ingredient
6 slices Whole wheat bread; toasted
4 tablespoons Strained yoghurt
4 \N Lettuce leaves; with 1 edge trimmed

2 \N Beefsteak tomatoes; each cut into 4
\N \N ; slices
4 \N 6 oz boneless; skinless chicken
\N \N ; breasts, smoked and
\N \N ; sliced on the
\N \N ; diagonal
\N \N Freshly ground black pepper
\N \N Freshly ground salt
\N \N Fresh finely chopped parsley


For each serving, take 2 pieces of toast, hot from the toaster, and spread 1 side of each with ½ teaspoon of the yoghurt.

Place the toast slices side by side on a dinner plate, yoghurt side up.

Layer 1 piece of toast with a generous-sized lettuce leaf, letting its edges flow over the sides of the toast, and 1 chicken breast. Sprinkle with black pepper, salt and parsley to taste.

On the other piece of toast layer 2 slices of tomato and dust with parsley.

Serve as an open-faced sandwich, with a knife and fork.
