Simple summer vegetable soup

2mediumsCarrots -- Scrape & Sliced
2Stalks Celery -- Sliced
8cupsChicken Broth
2mediumsTomatoes -- Peel & Chop
2mediumsZucchini -- Quarter & Slice
½cupString Beans Or Peas
1cupSpinach; Fresh -- *
Salt & Pepper -- To Taste

Directions

* Wash and cut the fresh spinach into strips.

Melt the butter in a soup pot; add the onion, carrots and celery.

Cook over medium heat, stirring often, for 5 minutes. Add the broth and tomatoes and simmer another 10 minutes. Add the spinach and cook for an additional 1 minute. Season with salt and pepper to taste.
