Shrimp or crabmeat mousse

Ingredients

1pack(3-oz) lemon gelatin
1cupBoiling water
2cupsCrabmeat or shrimp or 1 cup of each
½cupChopped celery
tablespoonChopped green bell pepper;, optional
½teaspoonSalt
tablespoonPrepared horseradish
tablespoonChopped scallions
1dashCayenne pepper
½cupMayonnaise or salad dressing
½cupCream;, whipped
Salad greens

Directions

Dissolve lemon gelatin in boiling water. When partially congealed add all ingredients except salad greens and blend. Pour into mold. When firm, unmold on salad greens. Serve with asparagus spears or green peas and heated rolls. Serves 4-6. Posted by Ethel Snyder <essie49@...> Date: August 08, 1997
