|10 \N||Shiitake mushrooms|
|1 tablespoon||Plus 1 ts butter|
|\N \N||Salt and pepper to taste|
Remove and discard stems from mushrooms and wipe caps with a damp cloth. Slice mushrooms into -inch strips.
In a 10-inch saut pan, melt 1 tbs of butter over medium-low heat. Add mushrooms and cook, stirring frequently, until they are soft and cooked through, about 5 minutes.
Add the Madeira and the remaining butter. Raise heat to high and cook until the Madeira and butter have reduced and coated the mushrooms.
Season with salt and pepper and serve immediately.
