Scrambled eggs w/fresh oysters and chiles

1teaspoonWhite/black pepper
1cupShucked oysters (10-12)
3tablespoonsOlive oil
1tablespoonSesame oil
1tablespoonMinced ginger
¼cupChopped scallions (white and green parts)
1tablespoonChile (I used Serranoes; may want to use more)
2tablespoonsSoy sauce
4largesEggs; lightly beaten
Salt and pepper to taste

I forget the authors and can't look it up since I sent it to my sister for her b-day.

Serves 4 as an appetizer

Dredge oysters in first three ingrediants and fry in oil. Fry for 2-3 minutes or until lightly browned. Set aside. Cook ginger, scallions and chile in the oil for 1 minute. Add soy to egg and scramble with the other ingrediants. Add dash of Frank's or Tabasco if desired.

Yummmm! Though I think it would have gone better with a nice lager or pilsn, rather than the coffee I had <shrug>. I halved the above recipe which worked perfectly for one for breakfast.
