Scallops and snow peas

| ½ | pounds | Sea scallops | 
| 1 | teaspoon | Grated gingerroot | 
| 1 | tablespoon | Fresh lemon juice | 
| 1 | medium | Red jalapeno pepper | 
| ½ | teaspoon | Balsamic vinegar | 
| Seeded and minced | ||
| 1 | tablespoon | Minced scallion | 
| 4 | ounces | Trimmed snow peas -- about | 
| Salt to taste | ||

Directions
Heat butter in large skillet.Add gingerroot and jalapeno pepper and saute over medium heat 1 to 2 minutes.Do not allow to burn.Add snow peas and saute until they glisten,2 to 3 minutes... Add scallops and saute over medium high heat until cooked through,turning over once,5 to 7 minutes.Add lemon juice,vinegar and scallion.Season with salt and pepper.Cook over high heat until mixture is hot and flavors blend,about 1 minute.Makes 2 servings....
