Scallops and snow peas

Measure Ingredient
\N \N PHILLY INQUIRER-----
2 tablespoons BUTTER
½ pounds Sea scallops
1 teaspoon Grated gingerroot
1 tablespoon Fresh lemon juice
1 medium Red jalapeno pepper
½ teaspoon Balsamic vinegar
\N \N Seeded and minced
1 tablespoon Minced scallion
4 ounces Trimmed snow peas -- about
\N \N Salt to taste
1½ \N Cups
\N \N Fresh ground pepper to
\N \N Taste

Heat butter in large skillet.Add gingerroot and jalapeno pepper and saute over medium heat 1 to 2 minutes.Do not allow to burn.Add snow peas and saute until they glisten,2 to 3 minutes... Add scallops and saute over medium high heat until cooked through,turning over once,5 to 7 minutes.Add lemon juice,vinegar and scallion.Season with salt and pepper.Cook over high heat until mixture is hot and flavors blend,about 1 minute.Makes 2 servings....
