Sausage broccoli minestrone soup

Ingredients

3tablespoonsTo 4 tb Olive Oil
1poundsGourmet Sausage (or Chicken Sausage, casing removed)
2cupsOnion, coarsely chopped
1Clove Garlic, minced
8cupsWater ( or defatted chicken stock)
1teaspoonTo 2 ts Salt (optional)
Freshly Ground Pepper
2To 3 Fresh Basil Leaves
1pinchDried Hot Pepper Flakes
1bunchFresh Broccoli, trimmed and cut into small pieces
3cupsPotatoes, diced
½cupItalian Parsley

Directions

In a large pot add olive oil and set over medium heat. Add sausage and onion and saute' until meat is brown ( about 5 minutes). Add garlic and saute' 1 minute. Add water or stock, salt, black pepper, basil, and pepper flakes. Bring to boil. Cover and simmer about 20 minutes.

Add broccoli, potatoes, and parsley and simmer until potatoes are tender. Serves 8
