San joaquin oven roast

Measure Ingredient
4 pounds Chuck roast
2 teaspoons Salt
¼ teaspoon Pepper
2 tablespoons Flour
¾ teaspoon Crumbled marjoram leaves
¼ cup Freeze dried shallots
\N \N Water

Sprinkle both sides of meat with salt, pepper & marjoram. Place in roasting pan in 500 oven; brown on both sides, turing once, 30-40 minutes. Sprinkle shallots over top of meat: cover, reduce heat to 350. Cook 1 hour or until tender. Measure pan drippings for gravy; add enough water to measure 2 cups. Blend in flour; cook & stir until thickened.
