Savory oven pot roast

Yield: 6 Servings

Measure Ingredient
3 pounds Rolled rump roast
\N \N Salt, pepper, pinch of nutmeg
4 tablespoons Flour
1 tablespoon Oil
1 \N Clove garlic; crushed
4 larges Onions; sliced
2 cups Hot beef broth
2 tablespoons Tomato paste
1 tablespoon Sugar
1 tablespoon Vinegar
1 teaspoon Thyme
1 \N Bay leaf; broke

Combine flour, salt, pepper, and nutmeg. Dust beef with seasoned flour.

Heat oil in heavy pan; brown meat, then remove. Brown onions and garlic lightly in pan. Replace meat; add remaining ingredients. Cover and bake at 350F until meat is tender, about 2½ hours. Discard bay leaf. Serve with pan gravy.
