Salsa dressing (european-style)

Measure Ingredient
2 \N Red onions; finely chopped
2 \N Green peppers; seeded and diced
2 \N Green chillies; seeded and finely diced
1 clove Garlic; finely chopped
1 tablespoon Olive oil
8 \N Plum or salad tomatoes; skinned, seeded and diced
1 \N Limes; juice of, up to 2
\N \N Salt



Mix together the onions, green peppers, chiles, and garlic. Add the oil and juice of 1 lime. Add the tomatoes and stir well to slightly break down the tomato flesh. Adjust the seasoning with a good pinch of salt. The salsa should have a good balance of flavours. More lime juice may be needed to lift the other tastes. The salsa can be kept in the fridge for a few days.
