Salmon nicoise salad

Ingredients

ounceCanned Alaska salmon
1smallHead butter lettuce
1cupCooked & cooled green beans
1largeTomato; sliced into wedges
1smallRed pepper; cored & sliced
½cupThinly sliced red onions
Classic Vinaigrette
3tablespoonsOlive oil
3tablespoonsWhite wine vinegar
½teaspoonDry mustard
1Garlic clove; minced

Directions

Wash and dry lettuce; arrange leaves on a large serving platter. Toss together the beans, tomato wedges, red pepper slices and red onion slices; arrange on the lettuce. Drain and flake salmon. Arrange flaked salmon on bean mixture. Drizzle Classic Vinaigrette evenly over salad just before serving. Classic Vinaigrette: Whisk together all ingredients until well combined.
