Roomie's low fat vegetarian chili

Ingredients

2Medium onions
2Cloves of garlic, minced
56ouncesCanned tomatoes or 3lb fresh
15½ounceRed kidney beans
15ouncesWhite kidney beans
15ouncesChickpeas
cupChopped celery
1Green pepper, chopped
3tablespoonsLime or 2 T lemon juice
1tablespoonChili powder
teaspoonOregano
teaspoonCumin
¼teaspoonCinnamon
12ouncesLight beer
Dry roasted peanuts
Cheddar cheese

Directions

1. In a large pot, heat oil and saute onions and garlic until soft.

2. Add all ingredients except beer, peanuts and cheddar cheese. Cover and simmer 1½ hours.

3. Add beer and simmer uncovered for 30 minutes.

4. Add handful of peanuts and sprinkle cheese on each serving.
