Roasted shallot and turkey pizza

Ingredients

6 | larges | Shallots |
12 | Inch thin crust pizza shell (homemade or commercial) | |
⅔ | cup | Or antipasto |
⅓ | pounds | Shredded cooked turkey |
½ | cup | Sliced black olives |
1½ | cup | Sliced fresh mushrooms |
1 | tablespoon | Fresh tarragon, chopped |
Coarse black pepper | ||
1 | cup | Grated mozzarella cheese |
1 | cup | Monterey jack, grated |
Directions
Preheat oven for 450F. Pinch off root ends of shallots and squeeze out of the skin. Spread the antipasto over pizza shell. Sprinkle the shallots, olives, turkey, mushrooms and tarragon on top of antipasto.
Grated pepper over top, and then cover with cheeses. Bake for about 15 minutes, or until cheese is bubbly and a nice golden brown color.
