Roasted shallot and turkey pizza

Ingredients

Quantity Ingredient
6 larges Shallots
12 Inch thin crust pizza shell (homemade or commercial)
cup Or antipasto
pounds Shredded cooked turkey
½ cup Sliced black olives
cup Sliced fresh mushrooms
1 tablespoon Fresh tarragon, chopped
Coarse black pepper
1 cup Grated mozzarella cheese
1 cup Monterey jack, grated

Directions

Preheat oven for 450F. Pinch off root ends of shallots and squeeze out of the skin. Spread the antipasto over pizza shell. Sprinkle the shallots, olives, turkey, mushrooms and tarragon on top of antipasto.

Grated pepper over top, and then cover with cheeses. Bake for about 15 minutes, or until cheese is bubbly and a nice golden brown color.
