Roasted pepper dip

Ingredients

1 Jar roasted peppers; drained patted dry,
; and finely chopped
; (about (7 ounces)
½ Cup)
1 teaspoon Minced garlic
1 teaspoon Salt
1 Container; (16 ounces) low-fat
; sour cream

Directions

Place all the ingredients in a medium-sized bowl; beat with an electric beater on medium speed until thoroughly blended. Serve immediately or store in the refrigerator in an airtight container until ready to use.

NOTE: Great as a tossed salad dressing or veggie dip, and also good dolloped on cooked chicken or meat.
