Roasted pepper dip

Measure Ingredient
1 \N Jar roasted peppers; drained patted dry,
\N \N ; and finely chopped
\N \N ; (about (7 ounces)
½ \N Cup)
1 teaspoon Minced garlic
1 teaspoon Salt
1 \N Container; (16 ounces) low-fat
\N \N ; sour cream

Place all the ingredients in a medium-sized bowl; beat with an electric beater on medium speed until thoroughly blended. Serve immediately or store in the refrigerator in an airtight container until ready to use.

NOTE: Great as a tossed salad dressing or veggie dip, and also good dolloped on cooked chicken or meat.
