Roasted fruits with cinnamon

Yield: 4 servings

Measure Ingredient
⅓ pounds Sliced almonds
2 ounces Sugar
½ ounce Egg whites
2 Plums
2 Peaches
2 Pears
2 tablespoons Honey
2 tablespoons Brown sugar
2 tablespoons Red wine
½ teaspoon Cinnamon

GLAZED ALMONDS

Preheat oven to 300 degrees. Toss together almonds and sugar. Stir in egg whites until well mixed. Bake on a lightly greased sheet pan at 300 degrees, turning with a spatula until golden brown and caramelized. Remove.

Break up slightly.

Cut in quarters and remove stones and seeds. In large bowl stir together honey, brown sugar, red wine and cinnamon. Toss with fruit. Place in a baking dish and roast in a wood oven or a 400 degree oven until tender, about 20 to 30 minutes. Garnish with glazed almonds.
