Remoulade mayonnaise

Yield: 1 1/4 cups

Measure Ingredient
1 cup Prepared mayonnaise
1 \N Scallion (3 inches of green left on)
2 teaspoons Tiny capers, chopped
1 tablespoon Flat leaf parsley (chopped)
1 tablespoon Dijon-style mustard
2 teaspoons Whole-grain mustard
1 teaspoon Tarragon vinegar
¼ teaspoon Tabasco sauce
\N \N Salt and freshly ground
\N \N Black pepper, to taste

Combine all of the ingredients in a small bowl. Refrigerate, covered, until time to use.

Makes 1¼ cups. Per 1 tablespoon: 82 calories, .3g carbohydrates, .2g protein, 9g fat,

6 mg cholesterol

This is a lovely dipping sauce to make fresh. It's similar to tartar sauce but with the spices of Louisiana.
