Remoulade mayonnaise

1Scallion (3 inches of green left on)
2teaspoonsTiny capers, chopped
1tablespoonFlat leaf parsley (chopped)
1tablespoonDijon-style mustard
2teaspoonsWhole-grain mustard
1teaspoonTarragon vinegar
¼teaspoonTabasco sauce
Salt and freshly ground
Black pepper, to taste

Directions

Combine all of the ingredients in a small bowl. Refrigerate, covered, until time to use.

Makes 1¼ cups. Per 1 tablespoon: 82 calories, .3g carbohydrates, .2g protein, 9g fat,

6 mg cholesterol

This is a lovely dipping sauce to make fresh. It's similar to tartar sauce but with the spices of Louisiana.
