Red cabbage and apples

Yield: 8 Servings

Measure Ingredient
2 pounds Red cabbage, finely shredded
8 \N Juniper berries, crushed
¼ pint Boiling water
1 teaspoon Salt
8 ounces Onions, chopped
8 ounces Apples, chopped
2 ounces Soft brown sugar
1 teaspoon Caraway seeds
1 \N Bag bouquet garni
1 tablespoon Cornstarch
3 tablespoons Malt vinegar
1 tablespoon Cold water

Place red cabbage, junipers, ¼ c boiling water & salt in a large pot. Bring to the boil, cover & simmer for 30 minutes. Stir in remaining water, onions, apples,sugar, caraway seeds & bouquet garni.

Cover & cook gently for 1½ hours, stirring frequently.

Remove bouquet garni. Blend cornstarch with the vinegar & cold water till smooth. Stir into the cabbage & cook uncovered for 10 minutes.
