2 pounds | Red cabbage, finely shredded |
8 \N | Juniper berries, crushed |
¼ pint | Boiling water |
1 teaspoon | Salt |
8 ounces | Onions, chopped |
8 ounces | Apples, chopped |
2 ounces | Soft brown sugar |
1 teaspoon | Caraway seeds |
1 \N | Bag bouquet garni |
1 tablespoon | Cornstarch |
3 tablespoons | Malt vinegar |
1 tablespoon | Cold water |
Place red cabbage, junipers, ¼ c boiling water & salt in a large pot. Bring to the boil, cover & simmer for 30 minutes. Stir in remaining water, onions, apples,sugar, caraway seeds & bouquet garni.
Cover & cook gently for 1½ hours, stirring frequently.
Remove bouquet garni. Blend cornstarch with the vinegar & cold water till smooth. Stir into the cabbage & cook uncovered for 10 minutes.
