Raspberry spinach salad

Yield: 6 servings

Measure Ingredient
2 tablespoons Raspberry vinegar
2 tablespoons Raspberry jam
⅓ cup Vegetable oil
¾ pounds Fresh spinach -- rinsed and
\N \N Drained
¾ cup Pecans -- toasted divided
1 cup Fresh raspberries --
\N \N Divided
2 larges Kiwi fruit -- sliced 1/4
\N \N Thick
\N \N Peeled

With whisk or a blender, blend vinegar and jam. Add salad oil in thin stream while whisking. Set aside. Mix spinach, half of nuts, half, of raspberries and all of dressing. Top salad with remaining nuts, berries and kiwfruit. Mix again, before serving. Yield: 4 to 6 servings.
