Ingredients

2tablespoonsSalad oil
½cupChopped onion
½cupGreen pepper,cut in 1/2\" squares
1teaspoonCurry powder
2cupsCooked chicken chunks
¼cupRaisins
1teaspoonSalt
½teaspoonThyme leaves,crushed
½cupWater

Directions

In a large skillet heat oil until hot. Add onion and green pepper; saute until tender, about 5 minutes. Add tomatoes, chicken, raisins, salt, thyme and water. Simmer, covered, until hot, about 5 minutes.

Serve over steamed rice, if desired.
