Quick country captain

Yield: 4 servings

Measure Ingredient
2 cups Diced tomatoes
2 tablespoons Salad oil
½ cup Chopped onion
½ cup Green pepper,cut in 1/2" squares
1 teaspoon Curry powder
2 cups Cooked chicken chunks
¼ cup Raisins
1 teaspoon Salt
½ teaspoon Thyme leaves,crushed
½ cup Water

In a large skillet heat oil until hot. Add onion and green pepper; saute until tender, about 5 minutes. Add tomatoes, chicken, raisins, salt, thyme and water. Simmer, covered, until hot, about 5 minutes.

Serve over steamed rice, if desired.

Serves 4.
