Country captain chicken #1

Yield: 6 Servings

Measure Ingredient
2 Fryers; cut up -or-
4 Chicken breasts; halved
6 tablespoons Butter
1 Onion; sliced thin, separated
1 Green pepper; cut in strips
2 Cloves garlic; minced
1 can (16-oz) tomatoes
1½ teaspoon Salt
1 teaspoon White pepper
1½ teaspoon Curry powder
1½ teaspoon Thyme

Saute onion, pepper and garlic in butter. Add tomatoes and seasonings and simmer for 10 minutes. Place chicken in large roasting pan, skin side up.

Pour on sauce, cover and bake at 350 for 45 minutes. Uncover and bake a few minutes to brown. Serve over rice.
