|2 teaspoons||Baking powder|
|1 cup||Canned or fresh coconut milk|
|½ cup||Butter/margarine, melted|
|1 teaspoon||Vanilla extract|
|2 cups||Grated unsweetened coconut|
|1 cup||Currents or raisins|
Preheat oven to 350 degrees F. Sift dry ingrediants into mixing bowl, blend in egg, milk, butter and vanilla. Mix in coconut and currents/raisins if used. Turn out onto floured board and knead slightly. Shape into 2 loaves and pat into 2 buttered med. loaf pans. Bake 40-45 min., until a toothpick in the center comes out clean.
