Quick coconut bread

cupSugar
2teaspoonsBaking powder
¼teaspoonSalt
1Egg, beaten
1cupCanned or fresh coconut milk
Or milk
½cupButter/margarine, melted
1teaspoonVanilla extract
2cupsGrated unsweetened coconut
1cupCurrents or raisins
(optional)

Directions

Preheat oven to 350 degrees F. Sift dry ingrediants into mixing bowl, blend in egg, milk, butter and vanilla. Mix in coconut and currents/raisins if used. Turn out onto floured board and knead slightly. Shape into 2 loaves and pat into 2 buttered med. loaf pans. Bake 40-45 min., until a toothpick in the center comes out clean.
