Quick coconut bread

| 4 | cups | Flour |
| ⅓ | cup | Sugar |
| 2 | teaspoons | Baking powder |
| ¼ | teaspoon | Salt |
| 1 | Egg, beaten | |
| 1 | cup | Canned or fresh coconut milk |
| Or milk | ||
| ½ | cup | Butter/margarine, melted |
| 1 | teaspoon | Vanilla extract |
| 2 | cups | Grated unsweetened coconut |
| 1 | cup | Currents or raisins |

Directions
Preheat oven to 350 degrees F. Sift dry ingrediants into mixing bowl, blend in egg, milk, butter and vanilla. Mix in coconut and currents/raisins if used. Turn out onto floured board and knead slightly. Shape into 2 loaves and pat into 2 buttered med. loaf pans. Bake 40-45 min., until a toothpick in the center comes out clean.
