Quick bread salad

Ingredients

¼cupOlive oil
3tablespoonsRed wine vinegar
3tablespoonsSnipped fresh oregano
½teaspoonSugar
¼teaspoonSalt
¼teaspoonPepper
¼poundsWhole wheat sourdough bread, cut in 1 1/2 in cube
½pack(10 oz) torn Italian-style mixed salad greens
1mediumTomato, cut in thin wedges
¼cupCherry tomatoes or yellow sweet pepper, halved
½cupGreek or other olives

Directions

In a screw-top jar combine oi, vinegar, oregano, sugar, salt and pepper.

Cover tightly and shake well.

In a large salad bowl combine bread cubes, torn Italian-style mixed greens, tomato wedges, cherry tomatoes or sweet pepper and olives. Add dressing; toss and serve.
