Quick bread salad

Yield: 6 Servings

Measure Ingredient
¼ cup Olive oil
3 tablespoons Red wine vinegar
3 tablespoons Snipped fresh oregano
½ teaspoon Sugar
¼ teaspoon Salt
¼ teaspoon Pepper
¼ pounds Whole wheat sourdough bread, cut in 1 1/2 in cube
½ pack (10 oz) torn Italian-style mixed salad greens
1 medium Tomato, cut in thin wedges
¼ cup Cherry tomatoes or yellow sweet pepper, halved
½ cup Greek or other olives

In a screw-top jar combine oi, vinegar, oregano, sugar, salt and pepper.

Cover tightly and shake well.

In a large salad bowl combine bread cubes, torn Italian-style mixed greens, tomato wedges, cherry tomatoes or sweet pepper and olives. Add dressing; toss and serve.
