Quick bean soup

Yield: 4 servings

Measure Ingredient
2 teaspoons Oil
½ cup Chopped onion
1 medium Green or yellow bell pepper, chopped
1 clove Garlic, minced
15½ ounce Can great northern beans, drained and rinsed
15 ounces Can chick peas, drained and rinsed
14½ ounce Can vegetable broth
2 teaspoons Chili powder

Heat oil in large saucepan or Dutch oven over medium heat until hot.

Add onion, bell pepper and garlic; cook and stir 5 minutes or until onion is tender. Add remaining ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer 15 minutes or until thoroughly heated.

Per serving: 230 cal., 10g pro., 34g carb., 10g fiber., 5g fat, 0mg chol., 780mg sod., 270mg pot., 2 starch, 1 lean meat and ½ fat exchanges.
