Prawns on lemon grass skewers

Ingredients

300gramsMinced prawns
1tablespoonMinced garlic paste
1teaspoonCoriander root; finely chopped
1teaspoonFish sauce
1teaspoonLime leaf; finely chopped
½teaspoonSugar
Trimmed lemon grass stalks
6tablespoonsRice vinegar
4tablespoonsSugar
½teaspoonSalt
1Garlic clove; very finely chopped
2largesRed chillies; seeded and finely
; chopped
1teaspoonCoriander leaves; finely chopped

Directions

SAUCE

First make the sauce, boil the sugar and vinegar to a syrup then add the garlic, chillies and salt off the heat. Allow to cool. When cool add the coriander.

Mix all the prawn ingredients but the lemongrass together. Mould around lemongrass sticks and grill on all sides until golden brown.
