Prawns on lemon grass skewers

Measure Ingredient
300 grams Minced prawns
1 tablespoon Minced garlic paste
1 teaspoon Coriander root; finely chopped
1 teaspoon Fish sauce
1 teaspoon Lime leaf; finely chopped
½ teaspoon Sugar
\N \N Trimmed lemon grass stalks
6 tablespoons Rice vinegar
4 tablespoons Sugar
½ teaspoon Salt
1 \N Garlic clove; very finely chopped
2 larges Red chillies; seeded and finely
\N \N ; chopped
1 teaspoon Coriander leaves; finely chopped


First make the sauce, boil the sugar and vinegar to a syrup then add the garlic, chillies and salt off the heat. Allow to cool. When cool add the coriander.

Mix all the prawn ingredients but the lemongrass together. Mould around lemongrass sticks and grill on all sides until golden brown.
