Prawns on lemon grass skewers

300 | grams | Minced prawns |
1 | tablespoon | Minced garlic paste |
1 | teaspoon | Coriander root; finely chopped |
1 | teaspoon | Fish sauce |
1 | teaspoon | Lime leaf; finely chopped |
½ | teaspoon | Sugar |
\N | \N | Trimmed lemon grass stalks |
6 | tablespoons | Rice vinegar |
4 | tablespoons | Sugar |
½ | teaspoon | Salt |
1 | \N | Garlic clove; very finely chopped |
2 | larges | Red chillies; seeded and finely |

1 | teaspoon | Coriander leaves; finely chopped |
SAUCE
First make the sauce, boil the sugar and vinegar to a syrup then add the garlic, chillies and salt off the heat. Allow to cool. When cool add the coriander.
Mix all the prawn ingredients but the lemongrass together. Mould around lemongrass sticks and grill on all sides until golden brown.
